Laboratory tests show how the varieties of fruit chips contain no acrylamide, a fact that is because during the process of fried fruits are not heated over 80 ° C. In the case of cassava varieties acrylamide content becomes 10% of the average content of acrylamide in a normal potato chips. These favorable results are due to low asparagine content in cassava, and the careful way of frying at temperatures of only 120 to 140 ° C versus 190 ° C normally used.
